When selecting cheese, the best advice is to buy what tastes good to you. Do you prefer a soft, creamy texure? Do you lean toward a salty, firm profile? Or, do you like the stinky stuff? Whatever satisfies your taste buds, there is a cheese for you!
Once you purchase your cheese, remove the plastic that it was likely wrapped in from the store. Re-wrap the cheese in parchment or wax paper so that it can breath and to also avoid it from taking on the taste of the plastic film. Then when you are ready to eat the cheese let it sit out at room temperature for at least one hour prior to serving so it can reach the optimum flavor and texture.
